Ingredients

  • 1 pound ground beef
  • 1/2 cup onion, chopped
  • 1/2 cup green pepper, chopped
  • 1 1/2 cup frozen corn, thawed and drained
  • 1 cup chunky-style zesty salsa
  • 3/4 cup shredded sharp or Mexican-style Cheddar cheese
  • 1/8 teaspoon pepper
  • 1 cup corn chips, crushed
  • sour cream, sliced jalapeño peppers, diced tomato (optional)

Instructions

  1. Preheat oven to 350 degrees F.
     
  2. Brown beef, onion and pepper in a skillet; drain. Add corn, salsa, cheddar cheese and pepper.
     
  3. Place beef mixture in a lightly greased 10" pie plate; top with crushed chips.
     
  4. Bake at 350 degrees F for 30 minutes. Let cool for 10 minutes; garnish as desired.

A good mid week evening meal, quick and easy to prepare and then into the oven it goes and you do something else while it cooks. We made a couple of changes. Used chicken (because we did not have any beef), omitted the corn chips (did not want to add them), added chopped fresh garlic and chili and used fresh corn, not frozen. Tasty and with tacos, guacamole and sour cream/jalapeno/tomato salsa on top it was a very nice meal.

This is really similar to something I've made on occasion, though I've put the chips on the bottom as well as on the top. I've also just eliminated the crushed chips entirely and used restaurant style tortilla chips to dip into the contents. It's a very tasty dish to make when friends are coming over. I've also added black beans to the recipe from time to time.

A great recipe....fast, simple to make and a very tasty dish. The second time I made this, I did add a small can of fire roasted green chilies (well drained) and topped it with chopped tomato and sour cream when serving. But it's also good just as is. I love the combo of fast, easy and tasty so thanks for posting this one.

If you look at the picture, there is corn in the dish. I will be adding a drained can of mexicorn when I make this dish!

In the instructions, corn is to be added to the other ingredients. Corn is NOT listed in the ingredients, so I have no idea how much or what type.

i couldnt find any corn in the recipe, do you mean half of the corn chips ?

When you say, add corn, are you talking about the corn chips as there isnt any corn in the recipe.

anyway you can start adding the nutritional information on recipes for diabetics and all that...it would help...thank you.....
